Microgreen and Goat Cheese Omelette

  • 2 large eggs

  • 1 tablespoon milk

  • Salt and pepper to tasts

  • 1 tablespoon olive oil

  • 2 tablespoons crumbled goat cheese

  • 1/4 cup microgreens


    • In a small bowl, whick together the eggs, milk, salt, and pepper until well combined.
    • Heat the olive oil in a non-stick skillet over medium heat
    • Pour the egg mixture into the skillet and swirl the pan to make sure the eggs are spread evenly.
    • Sprinkle the crumbled goat cheese over one half of the omelette and let it cook for about a minute.
    • Using a spatula, fold the other half of the omelette over the cheese and let it cook for another minute.
    • Carefully slide the omelette onto a plate and top with the microgreens.
