Microgreen and Goat Cheese Omelette

  • 2 large eggs
  • 1 tablespoon milk
  • Salt and pepper to tasts
  • 1 tablespoon olive oil
  • 2 tablespoons crumbled goat cheese
  • 1/4 cup microgreens



    1. In a small bowl, whick together the eggs, milk, salt, and pepper until well combined.
    2. Heat the olive oil in a non-stick skillet over medium heat
    3. Pour the egg mixture into the skillet and swirl the pan to make sure the eggs are spread evenly.
    4. Sprinkle the crumbled goat cheese over one half of the omelette and let it cook for about a minute.
    5. Using a spatula, fold the other half of the omelette over the cheese and let it cook for another minute.
    6. Carefully slide the omelette onto a plate and top with the microgreens.
    7. Serve hot and enjoy!
